- 1 teaspoon\u00a0baking soda<\/li>\r\n
- 1 teaspoon\u00a0baking powder<\/li>\r\n
- 1 teaspoon\u00a0kosher salt<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n
Cream wet ingredients
<\/strong><\/p>\r\n\r\n\r\n\r\n\r\n- 1 cup unsalted butter, softened<\/li>\r\n
- 1cup\u00a0sugar<\/li>\r\n
- 1 cup\u00a0dark brown sugar, firmly packed<\/li>\r\n
- 2large\u00a0eggs<\/li>\r\n
- 2teaspoons\u00a0vanilla<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n
Then stir in
<\/strong><\/h3>\r\n\r\n\r\n\r\n\r\n- 3 cups\u00a0oats\u00a0(not instant)<\/li>\r\n
- 1\u00a01<\/sup>\u20442<\/sub> cups\u00a0raisins<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n
Directions<\/strong><\/h3>\r\n\r\n\r\n\r\n\r\n- Preheat oven to 350\u00b0.<\/li>\r\n
- Whisk dry ingredients; set aside.<\/li>\r\n
- Combine wet ingredients with a hand mixer on low.<\/li>\r\n
- To cream, increase speed to high and beat until fluffy and the color lightens.<\/li>\r\n
- Stir the flour mixture into the creamed mixture until no flour is visible.<\/li>\r\n
- (Over mixing develops the gluten, making a tough cookie.) Now add the oats and raisins; stir to incorporate.<\/li>\r\n
- Fill a cookie scoop and press against side of bowl, pulling up to level dough (to measure 2 tablespoons of dough).<\/li>\r\n
- Drop 2-inches apart onto baking sheet sprayed with nonstick spray.<\/li>\r\n
- Bake 11-13 minutes (on center rack), until golden, but still moist beneath cracks on top.<\/li>\r\n
