These are a holiday favorite of my family. My sister made these one Christmas a few years back and I ate a good portion of them. I have since tried a couple of times to make them on my own but couldn’t get it quite right. My sister sent me the link to the recipe and of course I tested it just to be sure my memory serves me right, and right it did.
From my family to yours, a great snowball recipe for your holiday season.
Ingredients – Original recipe yields 24 servings
3/4 cup and 2 teaspoons butter
1/4 cup and 1 teaspoon confectioners’ sugar for dusting, or as needed
1/4 teaspoon salt
3/4 teaspoon vanilla extract
1-3/4 cups and 1 tablespoon all-purpose flour
2/3 cup and 1 tablespoon chopped pecans
1/4 cup and 1 teaspoon confectioners’ sugar for dusting, or as needed
Directions
Step 1
Preheat oven to 350 degrees F (175 degrees C). Arrange rack in center position of oven.
Step 2
Cream the butter with 1/2 cup of the confectioners’ sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
Step 3
Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it’s better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners’ sugar. Once they have cooled, roll them in confectioners’ sugar once more.
